About

A family business

In 1993 Nick Beardsley and Christophe Coquoin established their bistro style food and drink business at The Old Fleece in Woodchester, a mid-18th Century stone built former coaching inn. Nick’s hotel background was complemented by Christophe’s studies at Academy Des Beaux-Arts and both were budding chefs. Long days were spent over the large stoves creating their signature pâté, crepes and Tournedos Rossini. Serving the full menu all day required long hours and they both lived over the business with their respective partners. Nick’s young family developed with Ollie arriving in 1994, growing up in this busy hospitality venue and soon helping with the vegetable preparation and washing up.

Nick & Christophe purchased The Old Lodge in 2007 with its iconic position at the heart of Minchinhampton Common and panoramic views. Some sources claim the building was originally the home of the Common's warrener for King Henry Viii. Another states that Charles 1 played lawn bowls at the lodge when he was passing through in 1643, on his way to the siege of Gloucester. Historically important for “Marking Day” the release of free roaming cattle onto the Common and its time as the club house for Minchinhampton Golf Club, The Old Lodge is now run by Ollie Beardsley where his team offer hotel accommodation, excellent casual dining and is a popular destination for weddings, gatherings and wakes.

Looking ahead, a five year redevelopment of the Old Fleece has delivered new kitchens, washroom facilities and the first underground beer cellar this century. An extension adds a lounge and dining room with woodburning stove and Christophe’s use of reclaimed materials, including from neighbouring Rooksmoor Mill creates an atmospheric interior. Lea and her Fleece team are extending opening hours to provide a free range breakfast/ brunch menu from 8am. Both the Lodge and Fleece serve food daily from 8am until 9pm. (8pm Sundays).
