Inspired by the new team of chefs, headed up by Antony Benedict, who trained at the Taj Coromandel in Chennai (formerly Madras), the new Moggu menu runs alongside Tipputs' classic British menu.
The name Moggu comes from the spice marati mogul 'moggu', a dried flower pod used in dishes from the southern Indian state of Chettinad, known for its culinary delicacies, essential spices and a carefully chosen selection of aromatic favours. Antony, 32, enjoys homestyle Indian cooking and, although he finds it hard to pin down a favourite dish, he's very partial to birianis.
